Another late night baking. This is an easy one. It’s a bacon, cheese and tomato. I got the recipe for taste.com.au here It is also a muffin you can have tomato sauce with!

Variations: I made mini muffins instead and half the ingredients. I also used the dry italian herbs from safeway instead of the fresh one.

I love baking at night. I find it calming and I can lose myself in the process. I’m still a newbie and I ask really silly question like do we sift brown sugar but I find that I am better than I first started. I learnt that it is very…. extremely important to have room temperature egg and butter for creaming.

I like to try new recipes for various reasons. Among one of the reasons, I like to place myself in uncomfortable situations to keep myself challenged and to remember to just wing it at the moment. I think we are better than we thought.
